This quote by David Byrne resonates deeply with me. I often look forward to breakfast when there’s leftover food from dinner, and I can repurpose it into something delicious.

Yesterday morning, as I opened my fridge to take stock of the leftovers, I spotted some cooked rice from dinner. I also had boiled and peeled potatoes, a staple I keep ready for quick recipes.

The combination sparked an idea: Rice Fritters- A quick ,crispy and flavorful dish that’s perfect for a weekend breakfast.

Rice Fritters Recipe

Ingredients:

• Cooked rice

• Mashed potatoes

• Ginger, garlic, and green chili paste

• Finely chopped onion and coriander leaves

• Salt to taste

• 1 teaspoon lemon juice (for a tangy kick)

• Besan (gram flour) for binding .I sometimes also use rice flour.

Procedure

1. In a mixing bowl, I combined cooked rice, mashed potatoes, ginger-garlic paste, chopped onions, coriander, and gram flour. Added salt and a teaspoon of lemon juice for tanginess.

2. Then mixed the ingredients well, shaped them into small balls, and flattened them slightly.

3. I then deep fried these fritters in filtered groundnut oil until golden brown. Alternatively, for a healthier version, you can also shallow fry them in a frying pan with minimal oil.

It was a leisurely Saturday morning, and my husband and I relished these crispy fritters with hot ginger tea.

There’s something comforting about repurposing leftovers into a meal that feels brand new while minimizing food waste.
